Healthy Energy Bites

This classic snack is one of my favorites to meal prep for the week! They are so easy to make and they last in the fridge for several days and in the freezer for several weeks. If you have a spare 15 minutes, you can easily whip these up and have a quick grab-and-go snack or breakfast at any time!


The base of these bites are oats (I used Bob's Red Mill gluten free) and chia seeds. If you don't like chia seeds or can't have them, you can swap it out with hemp seeds or just add more oats!


The sweetener in these is pure maple syrup but you could use any liquid sweetener you like, such as raw honey, agave, brown rice syrup, and date syrup. Maple syrup is just personally my favorite, makes a great flavor, and is easily accessible to everyone.


I used creamy natural peanut butter but you can use any nut butter that you have! Just always make sure the only ingredients are nuts & salt! :) If you are allergic to nuts, sunflower seed butter is a great option!



Makes around 25


Ingredients:

2 cups oats

1/4 cup chia seeds

1/2 cup maple syrup

1/2 cup peanut butter

1/4 tsp vanilla

1/2 tsp cinnamon

2 tbsp coconut oil

1/2 cup choc chips


Directions:

- Place all ingredients in a food processor and blend until all combined and sticky

- Roll into small to medium sized balls and store in the refrigerator or freezer

- That's it! Super easy and YUMMY



IF YOU DON'T HAVE A FOOD PROCESSOR:

Use your blender to chop up the oats (just for a few pulses) and then slowly blend all the other ingredients in.

IF YOU DON'T HAVE A BLENDER:

You can combine all the ingredients by hand, but there will be bigger oat chunks and may not look just like the picture above. You also may have to refrigerate the mixture or add in more sweetener to help them stick together to easily form balls.

OR.. you can always just eat the mixture with a spoon like cookie dough.. (yes, it's THAT good)
