Strawberry Chia Jam

Strawberry jelly... but make it healthy!

I LOVE jelly on my toast, or a good old fashion pb&j. BUT since being more health cautious and a major "ingredient reader" I have strayed away from any sort of store bought jam or jelly or spread. They normally loaded with sugar, HFCS, additives, and preservatives. Aka.. a ton of not-so-good-for-you ingredients.

In fact, most don't even contain real fruit! The ingredients of Smucker's Strawberry Jelly is "strawberry juice, high fructose corn syrup, corn syrup, fruit pectin, and citric acid."

With that being said, my homemade 5 minute healthy chia jam is SO easy and healthy! It's a perfect alternative and my husband even likes it.. which is a huge plus since he doesn't typically find "healthy foods" to be as tasty. And it only has 4 ingredients!

Ingredients:

- 1 cup frozen strawberry halves

- 2 tbsp chia seeds

- 2 tbsp maple syrup

- 2 tbsp water

Directions:

  1. Place all ingredients in a small or medium pan over high heat.

  2. After boiling for a few minutes and the strawberries are thawed, start mashing it all together.

  3. After it looks good and combined, take it off the heat to let it cool and thicken a little more.

  4. Serve immediately warm or let it sit in the fridge to serve cold.

  5. Store in fridge in an air tight container!

You can easily double this recipe! This is a pretty small batch but It's so easy to whip up in just a few minutes when needed! I personally like it served warm right when its done, but cold is great, too! (and more "jam" like)

Let me know if you try this recipe and how you like to enjoy it best! :)
