Paleo Cinnamon Roll Pancakes

Pancakes or waffles?! That seems to always be a big debate.. and I don't know about you, but my answer is always PANCAKES! I've always preferred them over waffles, and I've also always loved cinnamon rolls (I mean who doesn't?) sooo I can officially say that this is my favorite pancake recipe of allllll time!


This pancake recipe is paleo, and can be made vegan. There are no refined sugar that will spike your blood sugar and there's an added benefit of collagen powder that will give you some extra protein and make this meal even more satiating!


To make this vegan, swap out the eggs for chia or flax seed eggs. For one egg: mix 1 tbsp of chia or flax seeds and 3 tbsp water and let it sit for a few minutes until its a gel-like consistency. (pictured above is one flax seed egg).


Ok now to the recipe! It makes 4-5 pancakes.


Ingredients:

- 1/2 cup almond flour

- 1 tbsp coconut flour

- 1 tbsp coconut sugar

- 2 tbsp collagen powder (optional)

- pinch of salt

- 1 tsp baking powder

- 1 1/2 tsp cinnamon

- 2 eggs

- 1/2 tsp vanilla


The swirl:

- 1 1/2 tbsp coconut oil (measure when melted)

- 1 1/2 tbsp coconut sugar

- 1 tsp cinnamon


Directions:

1. mix pancake mixture and swirl mixture separately in bowls

2. heat up a pan with coconut oil or coconut oil spray

3. scoop desired amount of mixture in the pan like normal pancakes

4. then take a spoonful of the swirl mixture and add it to the top of the pancakes in a circular swirl design

5. after a few minutes, flip pancakes and let the swirl side cook until pancakes are fully done




Topping options:

Sauteed apples with cinnamon, maple syrup, honey, leftover swirl mixture... or all of that!


These are SO sweet and good. I love making these more as a dessert than breakfast. Try them out and let me know what you think!! These will definitely increase your weekend brunch game :)
