Vegan Pumpkin Cookies



Who says you cant enjoy your pumpkin flavored treats while being gluten free, dairy free, and vegan?! This is the PERFECT vegan pumpkin recipe in my opinion. The texture is to die for, the pumpkin taste isn't too strong, and the pecans & vegan chocolate chips just tops it all off. This is a must try, vegan or not!


This is the perfect quick-n-easy recipe to whip up for your upcoming family holiday events, or just a little something that will satisfy your craving for this seasonal pumpkin flavored goodness.


Its sweetened with coconut sugar, which is a great alternative to brown sugar. It kind of has the same taste, and it is much healthier for you. Coconut sugar has a much lower glycemic index, so that means no blood glucose spike!

You can use a few different gluten free flours for this recipe, so just use what you have! You will just need 1 1/2 cups total of at least 2 different flours! See what I use and recommend below.



Ingredients:

6 tbsp canned pumpkin puree

1/2 cup coconut oil

1 tsp vanilla extract

1/3 cup coconut sugar

1 cup almond flour

1/2 cup coconut flour OR tapioca flour (or 1/4 cup of both)

1/2 tsp baking soda

1/4 tsp baking powder

2 tsp pumpkin spice seasoning (or 1 1/2 tsp cinnamon & 1/2 tsp nutmeg)

1/4 tsp salt

*Optional topping ideas - vegan chocolate chips, milk chocolate chips, pecans, walnuts, etc.


Directions:

1. Mix coconut sugar with wet ingredients using a hand or electric mixer.

2. Add in and mix dry ingredients.

3. Fold in vegan chocolate chips and nuts of choice.

4. Place in fridge for 10 minutes until chilled and a less-oily consistency.

5. Roll into tbsp sized balls and place on parchment paper and flatten out the cookies some (they wont expand that much!)

6. Bake for 8-12 minutes on 350 degrees Fahrenheit.

7. Add additional toppings on top of cookies after baking while cooling. *optional

8. Let them cool down on baking sheet before transferring to cooling rack. It takes them a while to harden and form since there are no eggs.

9. After cooled, store in fridge!
